Good morning,
I have previously ordered 3 D8 joysticks and a TT2 spinner wheel from GGG. I had went onto the site and filled out the contact form 3 different times to ask Randy some questions prior to placing more orders but no response in weeks.
I have a Jamma 60-in-1 board and would like to add a TT2 spinner wheel from GGG for Arkanoid. Is this possible and what would I need to order from GGG (or thereof)? How is it wired? As player 2 or a trackball?

It's been crazy around here and honestly, don't have good information for you for what you would like to do.
From my limited knowledge of these boards, it can be made to work. But the XXX-1 boards are a bit of contradiction. Users tend to gravitate toward them for their simplicity, but then wish to do more complicated things with them, that they really aren't well-suited for.
The long and short of it is that the TT2 (without the USB interface) will work on virtually any inputs designed for a trackball. However, this would entail adding appropriate connectors to the correct wires, possibly requiring splicing into the trackball wiring and the addition of a properly wired switch, which if done incorrectly, would damage the spinner. And since there are little to no configuration options on many of these kinds of boards, even when it works, it probably won't work as well as it could.
A USB connection to a configurable system will always yield the best possible results.
