i Have a Wells Gardner chassis WGM2574-U4GS41H in a NeoGeo cabinet that i want to connect to a GBS 8100, but am unsure of how the wiring should match up. Can anyone give me some insite?

the quality of the picture you will get from this converter will be awful
if you do want to go ahead you would need to but the video signal wires from the edge connector and connect them to the gbs8100 cga connector, you are better off using the cga cable that came with the converter and buy a molex connector and pins and make a cable to the actual chassis
imo if you using the cab for vga and over then just get a lcd monitor and install that

Do you have a better suggestion of trying to hook a raspberry pi setup to this monitor?

i know nothing of this myself but i did a 2 min search and found loads of info online
looks like you need a pi to jamma adapter and downscaling software running

I have the same converter board: GBS-8100 and looking to connect it to a NT-35C.

Anyone know what wires I would need coming off the screen to the GBS 8100?
