Besides The Sprint series of games, and Super Off-road, were there other games that had multiple steering wheels for one screen?

Danny Sullivan's Indy Heat, Demolition Derby, and Badlands are all I can think of.

Yeah they're aren't a lot. Any remaining games are going to be clones of the already mentioned games.

Here's a few more. Some are Sprint rip-offs.
American Speedway
Demolition Derby
Drag Race (though the main focus is shifting gears)
Fire Truck (2-player co-op controlling one truck)
Hot Rod
Redline Racer

Good stuff, I didn't know about those other games, I really miss the satisfaction of spinning the sprint wheel like a pro for those turns

Was badlands ever available in a 3 player config or only 2?

I've seen it in off-road cabs as a (bad) conversion, but afaik the third wheel was dead.... I don't think they made a 3p version.
