So I have ES running fine. I would like to install the kiosk mode (kid friendly) which I'm told is an experimental version that can be installed through the experimental menu... but it's Nowhere to be found in that menu. Has anyone used this?
I've tried to search the net as well, which has told me nothing about why it doesn't show or how to install it from the command line

By the way, I figured this out. I had to update the RetroPie setup script. I had an old version that did not display it.

It's not that hard to turn the default into a kiosk-like mode.
Just delete the retropie section from the es_systems.cfg, and before you do that, disable the option dialog under retropie settings that shows up before the games load.

How do you disable the option dialog?
-
edit the all/runcommand.cfg config and set disable_menu = "1"

That's not bad. But the actual kiosk mode version has some extra features as well like ratings and full mode/ kiosk mode / kid friendly mode that comes in handy. You can get by without it using the method you point out, but it does have some nice extras that you can't get otherwise.

What do those modes offer?
I've Retropie 3.6, stopped updating after the switch from DB to XML for game lists, which are horrible to edit.

This says it better than I can: https://github.com/retropie/retropie-setup/wiki/Child-friendly-EmulationStation#features
