So I learned a lot throughout this whole project. Main lesson. This takes a TON of time :-)
Anyways, it was very fun to do. Just need to work on the software side of things now that the hardware stuff is mostly done (still need to get the wiring under control).
If anyone is viewing this, and has any ideas on fixing the interference in my Lepai 2.1 channel amp, I am all ears. I tried everything and broke down to getting a Logitech Z313 that I took apart to power the speakers and 2" sub. Yeah 2" sub. But it helps, as the front speakers are all treble. And as Meghan Trainor knows, its all about the bass.
Got around to documenting the 2 player control panel and the 2 player bartop arcade cabinet today and posted the video walkthrough on YouTube.

I have the same 2.1 Lepai amp for my build which I planed to power from the PC power supply. I could not get the hard drive interference in the speakers to go away until I changed to a small 12 volt dc adapter that is plugged into the shared power strip inside the cab. However I had to switch to a shielded RCA cable cause I was still getting hum. Now it sounds pretty good.
Congrats on getting your build finished. I have been working on and off with mine for 2 years and finally getting past a few hurdles that have held me up. Maybe soon I can wrap mine up. Good luck on the audio amp, hopefully your interconnect might be the culprit. Mine acted like a big antenna to pickup hum and noise until I switched to a shielded type cable. Unfortunately I gave up trying to power it through the PC power supply however.

Had another update on the Lepai amp. I upgraded my power supply from 1.5 to 2 amps the other day and I started getting buzzing and noise out of the speakers with the new supply. It probably wasn't the amps, but I noticed the 2A power supply didn't have a ferrite core on the DC power supply line and the 1.5A did. This must be part of the equation on the audio noise maybe? Make sure you have a ferrite core on your power supply and see if that helps.
