Usually encoder like Ipac is located in control panel with joysticks and I think most people wire directly from joy to encoder. I want to install the Encoder somewhere else and I wonder how could I go about easy way to disconnect from the rest of the panel instead of lets say unscrewing each one of the wires from the ipac. Can I buy somewhere some kind of male/female terminal that I could wire and then simply disconnect by pulling apart?

The best most proper way (imo) is with the same connectors as were used in commercial arcade machines.
For my panel I did two connectors. One for each player control
heres a link to some at twisted quarter http://www.twistedquarter.com/index.php?main_page=index&cPath=149 (http://www.twistedquarter.com/index.php?main_page=index&cPath=149)

Great! Thank you for quick reply and the link!
From the drawings I can't figure out how do you attach wires into them? <-- EDIT: I just noticed I'd have to purchase pins separately from the molex connectors
Another question what wire size have you used?
And finally looks like you can add up to 12 wires, so directions + ground + some of the push buttons?

You may also want to look into a parallel port extension cable like this (http://www.amazon.com/C2G-Cables-02655-Female-Extension/dp/B000051183/).
The description on this cable states:
All 25 lines are wired straight through pin-to-pin for ease of compatibility.
Cut the cable in half -- wire one cut end to your encoder and the other to the controls.

That's pretty cool, cheap alternative. Thank you!
