is there a way to get to game configs like say on a real mortal kombat machine, you can get to a menu where you can make it harder, adjust sound stuff like that. how do you do that in MAME ?

That's the service menu. Try pressing F2, or go to the config menu, then Dip Switches, and set the service mode DIP switch.

It depends on the game.
Some games used Dip switches to change settings. These are emulated in MAME. Hit TAB to get to the config menu and scroll down to the dip switch setting and hit enter.
Other games have their setting in a service mode. Service Mode is usually started by pressing F2.

And some games need something else pressed at the same time as the F2 button. Those game might be listed in the mameFAQ (http://www.mame.net/mamefaq.html). If not, you can usually find notes in the source, and sometimes at mametester's (http://mametesters.com/") Dip switches, orange file, or BTANB.
At least one used to need to hold down the F2 button the whole time, but not sure if it's still that way. (Original must have been an on/off switch.)
