Oooo, good question.
I'd have to go with:
Dungeons & Dragons: Tower of Doom (http://www.arcade-museum.com/game_detail.php?game_id=7668)
4-player version. Spent SOOO much money on that game, especially when we decided to kill the dragon.
R-Type (http://www.arcade-museum.com/game_detail.php?game_id=9219)
I don't really know why, but I still drop a quarter EVERY TIME I SEE IT!!
Joust (http://www.arcade-museum.com/game_detail.php?game_id=8243)
I'm not a huge fan but the wife and kids go bonkers over this one. I love the cocktail cab.

if money and space was not an object, I'll take this:
Vector Games (Asteroids, AST.Deluxe, Star Castle, etc...)
Of course my childhood will come with:
Top Ten:
Pacman
Ms.Pacman
Galaxian
Galaga
Vanguard
Robotron
Defender
Donkey Kong
Space Invaders (any1)
Berzerk
Centipede
ooops....that's already 11.
I think much more........
I'll take a nice 52" LCD shove into PINBALL with Visual Pinball (forgot who sells this, but like what I saw).
Oh....never gonna happened 'till I hit the Mega or Powerball
-
Double Dragon
Star Wars
Quantum
-
Targ (or Spectar)
Red Baron
Defender
-
Missile command
Tempest
Timber
-
Off the top of my head I'd say:
Robotron
Donkey Kong Jr
Rampart
-
Three pins.
Addams Family (already own it)
Creature from the Black Lagoon
Monster Bash
then I'd take a Zeke's Peak
then I'd get Deadstorm Pirates: for the kids
Everything else I'll build.
-
Neo geo mvs-6-25, an mvs-4-25 for mame, and a random pin I might enjoy.
-
Hmmm money is no object?
Three pins all in mint condition:
Addams family
Funhouse
Space invaders.
Make a YouTube film, showing all three pins being delivered off a semi.
Then filming me with a sledgehammer smashing the pins to smithereens.
Sweeping up the remains into a dumpster and buying three more pins of the same quality and having a bit more hammer time. What a luxury.

I'd want
R-Type
720
Doctor Who pinball
-
Top Three.
1. Tron. Found a guy parting one out. I was the first to get to his house and bought all the pieces. He could not get it working. I was able to.
2. STNG pinball. Bought one in 1997 and kept it at my dads house until 2007 when I lived close enough to get it.
3. Star Trek Voyager. I got one for a good price because it was missing the hood piece. I will make one some time but I am not sure when I will have time.
Three that I want to get some day when the wife hits the lottery
1. The new Star Trek pinball
2. Discs of Tron
3. Big Buck Hunter Pro
Stan

MKII
Narc
Addams Family Pinball for my wife
-
Donkey Kong
Medieval Madness
Taxi
-
Three is too limiting....but....
Adam's Family Pinball (best pin ever, next to Black Knight :) )
Star Wars (cockpit version. No explanation necessary)
Galaxian (Iconic early game. Mostly for nostalgic reasons..plus I already have it.)
-
Narc
I'm restoring one as we speak ;)
Maybe you'd be interested when I'm done?
-
STAR FIRE (cockpit)
DEATH RACE
JOUST Pinball
and a cocktail WIZARD OF WOR for backup ;D
-
Hrmm... well, since it's all about recapturing that childhood....
Ms PacMan cocktail. Must come with a Shirley Temple and greasy slice of pizza every time I play it. I'll never get one of these for less than $750. :-P
A ratty JAMMA conversion. Maybe something like a Bad Dudes in a Centipede cabinet with BLACK TIGER burned into the CRT. Controls would be 100%, but I want that patina.
Flash pinball machine. I've got a Firepower and Alien Poker, and while both are similar, they don't quite scratch that itch. Another one I've never found at a good price. Been looking 15 years.
-
Marble Madness (the one game I wanted in my childhood)
Star Wars (everyone would want to play this.)
Dr. Who pinball (the one with the moving Dalek - a lot of players hate this game; I happen to enjoy it quite a bit.)
Honorable mention:
Donkey Kong
-
1) Smash TV (oh wait, I already have it)
2) X-men 6 player (Used to have it but sold it since I had no room). I'd want it in MINT condition.
3) Zookeeper - This is a game I discovered in MAME and would love to play the original.

Star Wars (everyone would want to play this.)
+1 (can I change my vote on my top 3 that I picked?)

I started a similar thread a couple years ago (http://forum.arcadecontrols.com/index.php/topic,117769.msg1248157.html#msg1248157 (http://forum.arcadecontrols.com/index.php/topic,117769.msg1248157.html#msg1248157))
and my response was:
1. Warlords Cocktail
2. Outrun 2SPsdx- 4 player linked driving cab.
3. Pac Man 25th Anniversary upright (Pac, Ms., and Galaga)
I think now I would say..
1. Keep the fancy linked Outrun 2 setup
2. Skee Ball! Some sort of multi-lane competitive setup
3. Sorcerer Pinball- Williams, 1985, and has all the cool stuff. Drop targets, extra flipper, spinners, multi-ball. Played one a while back and fell in love. But due to the general price and rarity of pinballs nowadays it is probably not going to happen.
-
(I'm not including any of the arcades I already own)
Sega R360 (if I had the room)
Medieval Madness
Mortal Kombat 1
-
Maybe something like a Bad Dudes Cabal in a Centipede Zaxxon cabinet with BLACK TIGER JOUST burned into the CRT. Controls would be 100 80%, but I want that patina.
I could make this happen if ya want. ;D
I think my three would be:
1. Spy Hunter (stand-up)
2. Star Wars (cockpit)
3. Toobin' (just always loved the waterfall marquee)
-
Star Wars cockpit
6-player X-Men
Donkey Kong
The first two because they're really hard to recreate in a BYO project and were tons of fun. The last for just pure nostalgia classic-ness.
-
Probably all pins...
Dr. Dude
T2
Black Rose
Honorable cab mentions:
Rolling Thunder
Wrestlemania
Joust
-
Three rock pins would keep me happy.
AC/DC
Metallica
Gn'R
-
.
-
Virtual On (2 Player)
Medieval Madness
Killer Instinct
