you can try a seimitsu with an s plate mounted like this from underneith with a square cutout and then fill it or something and cover it with graphics and lexan.
best bet for having the stick sit as high as possible would be to go with a metal control panel.

Get a longer joystick shaft.

I use carriage bolts, but I also use metal control panels as well.
-
i use a circle drill bit for the center hole and mount it with wood screws. my wood working skills are simplistic.

Have you read the mounting hardware and joystick mount sections of the FAQ (http://newwiki.arcadecontrols.com/index.php?title=FAQ#Mounting_controls_in_the_control_panel)?

The only way to mount a joystick without using a router is to under mount (see FAQ) and use a longer shaft...

For 3/4 MDF: I picked up one of these metal templates from Bob Roberts. Only $2 plus shipping. You simply line it up underneath and then mark your drill holes for the screws. You can then install the joystick bases from underneath the panel by first drilling a shallow pilot hole smaller than the actual screw. I used 1" long zinc plated wood screws from Home depot or Lowes at about $4 per 100.
The size is #10. The box would then be marked 10 X 1.
I've had my CP for years and they have never given me any issues. I believe NorthCoast customs has the same mounting method. (They provide pre-drilled holes for your screws)

Find it here: (search for the term "joystick template" under the tools section)

Helps when you mention which joystick you're using. ::)

There are other ways, but they are less commonly used.
Slagcoin shows a layering method here (http://www.slagcoin.com/joystick/mounting_layering.html) that you could achieve without a router.

undermounted in a recessed area to raise the height of the stick, bolted in from bottom into flush mounted T-nuts
spend $40, get a cheap router and bits from harbor freight.. they are not great for big jobs, but more than enough for recessing joyticks and routing tmolding slots.

I undermounted my joysticks and regretted it. But the other day I put some washers on the joystick shaft to eat up some of the real estate of the threads, and that $0.10 idea really saved me from cutting a new panel.
