I've recently picked up a 23" Apple Cinema display for dirt cheap and am debating what to build with it.
I already have a standard Ultimate Arcade II style stand up machine in my game room so I was thinking a bartop, cocktail or mini-pincab.
What I'm leaning towards is a cocktail that includes a pinball plunger and knocker and also plays horizontal with flip-out (flip-down?) controls on the side where the coin door normally is. Anyone seen a cocktail project like this I can use as reference?
Any other good ideas for my 'extra' monitor?

Build a vertical cab, or a cocktail cab like you were saying. But make the monitor tilt up when you wanna play horizontal games.

Very cool! Not sure I'd go through the effort to make it hydraulic but I definitely like the tilt.
I also want to hide the side control panel though I haven't seen any good examples of this in a cocktail. The best examples I've seen are this bar:
