I have just purchased an Epson 7800 PRO A1 Printer. Which Paper Roll should I buy to enable me to print control panels? Should I then laminate it? If so which laminator should I buy?

For control panels, you will probably want to protect the art by a sheet of plexiglass or lexan. In that case any paper will do that suits your level of desired print quality. I recommend a glossy type of paper for a nice effect.
If you don't want to have a sheet of plexi, you will have to print on different material such as vinyl. I'm not sure if you also need special inks or the compatibility with your printer. Since you're printing, I'd still recommend going for plexiglass to protect your artwork. For the sideart- this might suit your needs.
