Title: 8-way joysticks, OR 4-way and 8-way joysticks?

I'm planning on building a cabinet (no decision on upright or cocktail yet) and was wondering if I should use 8-way joysticks, OR 4-way and 8-way joysticks?

My first cab was a cocktail one, it has 3 side to it
one side has a orig pacman 4 way stick the other side has a 8 way and a trackball and then on the longer empty side I have a two play street fighter setup.  This setup allows me to get the best of all worlds!   I guess the question I would ask you is, what types of games to you plan on playing, newer or older?  The older games tend to use the 4 way sticks and the newer are mostly 8 way.

Depends on cabinet design (CP size) and the types of games you will be playing.  Keep watching www.groovygamegear.com, and an answer may materialize in a few days (weeks?).
