I ask this because I am looking to put together a pacman machine with no monitor. I have been looking for 19" color tvs to take the tube and yoke ( a la tube swap) and match it to a chassis. I have a 20" tv with a yoke that measures the same ohms as a k4600 and a 19" tube that I think will work. I don't know it the necks are the same though. So, could I just take the 20" yoke and put it on the 19" tube?

yep you can swap yokes as much as you like,you may need to adjust the convergence rings and/or add convergence strips to get perfect geometry
some yokes are bonded and almost impossible to remove with damaging yoke or tube
obviously if the neck type is different(thin or fat) then that is an issue

Any tips or tricks on removing the yokes? There's a clamp I know, but is there anything that is not readily apparent to a novice?

use a blade to cut any glue,undo the clamps and gently twist yoke off

You should also measure the inductance to be sure.
I don't know it the necks are the same though
You should find the schematics of the two screens to be sure they match, because even if the connectors physically match, you can have some difference for pinouts.

That's not so easy. Yokes are designed to match tubes with different deflection angles. Sure, in many cases, you can swap yokes that are very close, but even with adjustments, you won't always get a nice picture.
For small tubes (14 to 21") it's generally OK, but for 25-29" size, you have more restrictions.

I believe you can buy a new arcade monitor chassis to go with your TV tube from http://www.8liners.com/datatech/monitor.html. (http://www.8liners.com/datatech/monitor.html.) I'm not affiliated at all I just want someone to tell me how well their TV was converted before I get one :)
