There is about 12 emulators installed on the cabinet I've recently bought which all work fine from a Mala front end menu.
My problem is that I've installed two new ones, namely neo-rage and project tempest,
When I select a game from the mala menu, I then get up the emulator front menu instead of going straight to the game.
All the other emus work fine, just the two new ones I've added.
How do I correct this?

I'm not familiar with those emulators, but the problem is most likely that the proper command line isn't being sent to launch the game.
What do you have listed as the command line in the setup in Mala for each of those emulators?
You may want to look up how to manually launch a game via command line in those emulators.
Once you know how to do that outside of Mala, you'll know what Mala needs to send to do it.

I've tried looking in mala to see what's different from existing games to the new ones but they all seem the same,
Not sure where to look for the start command line is
