I have one speaker in my cab hooked up to a the left speaker slot on an amp. The AMP from there goes to the pc, to my headset.
When I have the headset plugged into the arcade I want the speaker on the cab to no longer function and have both speakers on the headset to work.
But currently, for some reason, the speaker remains functioning and only one speaker on the headset works when it's plugged in. Any suggestions"

For the headset you will have to use a mono to stereo adapter so that both channels can receive a signal.
I am not really well versed in creating a headphone cutout to disable the speakers when you plug them in, so I will have to let someone else answer that.

I want to try and help you but I'm a bit confused by what you wrote. If I understand it correctly you have a computer which has its outputs connected to an amplifier's input, the amplifier has one output connected to a singular speaker in your cabinet and you would like to connect a stereo headphone jack to your cabinet that will cut out the sound going to the speaker when you plug it in?

Yes. When I plug in the headset I want it to cut out the sound to the speaker, and I want the sound to play on BOTH headset speakers.

You need a headphone jack with 3 connectors and some spdt switches. Then when you plug the headphones in it cuts the sound going to the speaker. I have no idea what the actual terminology for one of these is but I think this should do the job.

The sound coming out from your pc is stereo, the sound going into your amp is stereo, the sound going to your speaker is 1 channel only left or right depending on how you connected. At the least put a wire from the + on left to the + on right at the amp so that the you get monophonic stereo.
If you put the headphone jack in between your connection from PC to amp then it will cut sound going to amp and cut off speaker whilst still giving you proper stereo sound.
