There is a semicircular disc under the joystick which keeps it locked (so you can't pull it out)
I'm having a LOT of trouble trying to pry it out, idk what to do.
Does anyone know how to remove this?

It's called an e-clip (or c-clip to some). Get a flathead screwdriver. Insert it into one of the gaps between the clip and joystick shaft. Rotate the screwdriver slowly and make sure the clip doesn't go flying across the room.

I assume that you're talking about the e-clip -- P/N 43-0019-00 in this diagram.

Use a small screwdriver to carefully pry it away from the shaft.
WARNING: They can shoot across the room and are easily lost.

after like 15 min I finally got 1 out, but that clip broke.. Do you know if they can be replaced? (can I buy that part at Lowes/Home Depot? (or a similar piece of metal)

Which joystick do you have?
Happ Competitions use a 7mm clip. (43-0019-00)
JLFs use the ones you can get here (http://www.canadianjoysticks.com/sanwa-denshi-jlf-e-clip-ring/) or here (http://www.focusattack.com/sanwa-jlf-e-clip/).
