I've a 6-year old that I just introduced to my previously non-functioning MAME cab. He is already obsessed with guns and shooting (he LOVES Sonic Wings), so I'd love to find something less violent for us to play together.
It's currently a dedicated MAME cab, but I guess I can add other emulators too. I'm just not that familiar with SNES and other systems supported by Maximus Arcade. He does really like Sonic and Mario games, but are there any that have 2-player coop? No driving games that need wheels or spinners, please.....all I have is joysticks and buttons.

Thanks for the suggestions, guys! It seems like my best chances will be from adding some console emulators to my cab. I found this site which lists a ton of good games on various platforms like SNES, GameCube, etc:

He'll enjoy the Donkey Kong Country stuff on SNES among others.

Ribbit, many sports games (use Romlister to filter them down), Hat trick (hockey), Escape kids, bomber man, Alex kid, JJ Squakers, joust, opa opa, pang poms, Penguin bros, pig out, snow bros, tecmo world cup, Warrior, world beach volleyball, zupappa, wonder 3, Boogie wings.
From my daughters favs list...

x100!!! So glad to see other people appreciating the Puzzle Fighter! It's been a favorite since PS1, and now the wife is addicted too!
Puzzle Bobble is a fun one. If you're adding console emulation, then check out Toejam and Earl for the Genesis. Classics like Ice Climber and Balloon Fight for the NES. Also for NES, you'll want Chip and Dale's Rescue Rangers and Double Dribble. Tetris/Dr Mario for the SNES is excellent. Any versions of Rampage are generally awesome, but I guess they involve fighting...well more destruction of property and the eating of small soldiers.
Not many people seem to remember this, but Lemmings for the SNES had an AMAZING 2 player head to head mode. It may be more than a little taxing for youngsters, but it's one to keep in mind as they get a bit older. Pilotwings for the SNES (although not 2 player simultaneous) can be really fun to take turns on if one of you take the skydive, the other takes the rocketpack, etc. Also for the SNES, Super Bomberman is great for a group of any size. likewise Battle Load Runner for the Turbo Grafix rocks the house in similar fashion.

old console games play just fine with a stick since they use dpad and buttons your stick and buttons should work perfect for even racing games on old consoles
super mario kart for snes.
i would say altered beast but you want to come away from fighting games.

How about the Puyo series. Easily my favorite puzzle games. They're non-violent, and they'll teach a lot of planning and spacial thinking and such.

Puzzle Uo Poko. (Or simply Uo Poko on some mame versions).

Try Tank Force. I know you said “no shooting” but this game is cartoony enough to be innocuous in that respect (you’ll know what I mean when you see it). You have to protect a base and take out enemy tanks in maze-like levels. I’ve only ever played single player, but I think it would be a great 2 player co-op game; have one guy protect the home base and the other go around and clean up.
I was going to say Joe and Mac Returns, but somebody beat me to it. In that same vein of Bubble Bobble rip-offs, there’s also Snow Bros, Nightmare in the Dark, and Diet Go-Go. Personally, I like all of these games much more than Bubble Bobble, which I think is grossly overrated.

+1 on Escape Kids. Kids love hitting the A button to run faster and the B button to jump.

So far Mario Bros is the only one we've tried, and it's great! The only problem is that he gets knocked out fast sometimes, and has to sit there until I get knocked out. You can't add a credit and jump back in. So I just let myself get killed so we can start over. Any co-op game where you can jump back in would be good.
Looking forward to trying all the other suggestions! I added ZSNES to Maximus Arcade, so I've got some good Donkey Kong Country and Mario games to try out with him today. I'm also going to add a GameCube and PSOne emulator to Maximus, but I have to wait until my new computer arrives. My current one can't handle those emulators.
