Can you guys help me out on what I need? Here is what I have so far:

How are you planning on getting those parts to interface with your xbox?
Hacking a controller (http://forum.arcadecontrols.com/index.php/topic,76185.0.html)?
Buying an interface (such as an iPac (http://ultimarc.com/ipac1.html) + the associated console adapter (http://ultimarc.com/xba.html)?)

Looks like a good start.
What are you using for your encoder? Hacked controllers or planning to drop in several of the new KADEs once they released?
Have you made a list of admin button functions? (start, back, exit, etc.)
Also, I assume on the rainbow 16-pack of wires that you are getting several of them:
2 joysticks - 8 wires
12 player buttons - 12 wires
other buttons - ?

I bought a KADE interface. It's not out yet, so I'm slowly buying the parts I'll need :)

You're spot on about the KADE :D. That's one sparked my interest to finally get going. I've always wanted to build one, but I suck at soldering and stuff. I saw on another website, the KADE project, and bought two of them.
I was told to buy those cables by someone on the KADE team. Do I need more than that?
I will definitely check out Degenatrons' XBox build. Thanks for the help :)

I was trying to say that the KADE really got my motivation going when I saw it. I suck at soldering and this seems simple enough for someone like me.

2 of the 16-pack QD wires and 1 of the 30-connector daisy-chain grounds should be fine for wiring the controls on a 2P bartop.
I recommended reading up on Jon's and other builds so you can see some of the little things that people forget like marquee retainers, cooling fans, volume controls, monitor power on/off, etc.
It's a good way to uncover the things you don't know that you don't know -- the unknown unknowns.
BTW Floriske.nl is in the process of doing a similar build (http://forum.arcadecontrols.com/index.php/topic,123039.0.html) using KADE prototypes.

That was me who recommended you get 2 of those cables :D
Another option is to re-purpose the cable from an old (or broken) xbox controller and attach a USB female port to end.
Yet another option is to use a regular USB extension cable and wire one end to the wires behind the controller port. If you're de-casing your xbox then this is a cheap solution.
The wiring of both options is super easy.

Those cables are cheap to just go buy. Often, I don't have the patience to wait for parts.

The KADE is missing one thing. Rotary control! Then it would be perfect and i would get one.
Rotary support is a feature we really want to see on KADE and we'll be experimenting with trackball support soon.
We just ordered some trackballs to play around with, including a Happ Arcade Trackball (with AMOA Harness) and a Sparkfun Trackball (with PS/2 plug).
Big shout out to Victor for contributing these items to our KickStarter project.
