Looking to add "flight" joystick to the cab to play things like afterburner, star wars trilogy, zaxxon, tron etc etc.
What does everyone use for this?

I recommend you look at the games you want to play on the klov.com website to see what joysticks they originally used. For example, Tron used an 8 way joystick not an analog joystick. Star Wars Trilogy used an analog joystick. You would need multiple joysticks to play these unless you went with one of the newer kinds that is analog but can mimic other types such as the 8 way. Personally, I have multiple sticks for these games.

Sadly only room for 1 as my panel is very tight to begin with and I am adding a spinner tomorrow.

For analog, get whatever you can. For digital, I would not use the old style Happ, like posted above. The centering grommet is made for gorillas. I suggest this neat piece (http://www.paradisearcadeshop.com/en/joysticks-trackball/299-import-flight-stick.html):
