Is there anyway to get newer cab friendly games (ie Lego Harry Potter) down to 640x480 (in my case) if the game doesn't support it? Currently the lowest resolution the Lego Harry Potter supports is 800x600. I bought the game for my arcade cabinet and I would like to play it on my cab.

It's probably going to be different per every game you want to do.
Looks like there is a "pcconfig.txt located in appdata in roaming for windows 7" that is the game configuration data.
Should look something like this:

You might try changing the resolution in that manually and see what happens.
