I have the U-HID, and I trying to figure out if I can get this to emulate two gamepads? Is there a way to do that?

Looks like it emulates only one gamepad with 32 buttons

Thanks for the confirmation.
Looks like I've over-estimated what this device could do.
I thought it could report itself as multiple joysticks or multiple gamepads.
I thought I might be able to use resistors to simulate the analog axis, but it looks like I'm still confined to 1 joystick id.

The U-HID is one gamepad, keyboard and mouse. A-PAC is two gamepads.

Any possibility of adding functionality for allowing two mouse devices on one u-hid. It would be a great option for those with two trackballs.

I second that request. The U-HID, as-is, with a single mouse output is not as great as it could be.
There's not a whole lot of point to have 8 quadrature mouse devices, yet only 2 axis on 1 device.
(Is there any application where 8 quadrature inputs [output to 2 axis as 1 device] would be useful?)

Yes, I have had a few requests for dual mouse support and will do it as a firmware upgrade.
