I've tried a ton on the PI. For my money: Ultimarc U-360. Hands down.

If you use rgbcommander you can even have it auto-switch modes based on the game you're playing.

As for trackball... probably any will do fine. It's basically a mouse. I use this: http://groovygamegear.com/webstore/index.php?main_page=product_info&cPath=74&products_id=363 (http://groovygamegear.com/webstore/index.php?main_page=product_info&cPath=74&products_id=363) Opti-wiz works just fine with the Pi.

What do you mean by "best USB arcade joystick"? All joysticks will work through USB using a USB controller board? Get yourself an iPac, Xin Mo or Zero Delay board (or two) and the joystick/buttons you like. The latter depends totally on your preferences. If you don't know what your preferences are, you should try them all. I started off with cheap China sticks and ended with Ultimarc Servosticks.
Trackball: probably Ultimarc U-trak is best value for money I guess.
