Picture this -

A standup, full size arcade cabinet with a 30" CRT (brand new).

A transparent, LCD bezel

An automatic riser, to bring the cabinet to sitting or standing height.

Voice controls via MyCroft AI (open source Alexa) . . "Hey Dreamcade, play Street Fighter 2".

I figure someone can make some decent money selling a transparent LCD that mounts over a license plate.

Except for the last bit, I don't see why not. I would stop at the riser.
