The brackets should not bend under the weight of a 27" arcade monitor or similar. They are made of heavy gauge steel (3/32") and when installed are completely rigid.
To put it another way, here's a quote from RandyT, who helped me manufacture the initial run of brackets:

The only force you'd need to be concerned with is "shear", and with that many screws, assuming the sides of the cabinet are immobile, the force required to break it loose would be tremendous.

There is no limit to the horizontal distance between holes (between the 2 sets of brackets), but the vertical limit when the brackets are adjusted to their maximum length is a hair over 20 5/8" (20.644") which is typical for a 27" monitor with universal mount. For a 31" monitor, you should be able to use the brackets without the adjustment plate, but I would recommend that you use carriage or socket cap bolts that go all the way through the cabinet walls from the outside to handle the extra weight. I can provide you with some nice black oxide button cap bolts if you're interested.

Updated the top post with some additional information on monitor sizes that can be supported.

This post is getting a little messy, so I'm working on a graphic that makes a lot more sense of the mounting measurements. Will be up soon.
