"Official" list for PC Games On Cab
Space Fractal:
GTA Vice City:
Is NOT a arcade friendly game at all, since it designed with use with a xbox/ps3 controller in mind and not with arcade cab in mind. How can you really use a 2 analog controllers AND buttons simulations at once? You can't really do that with a normal arcade controls most use.
If you ask me, it should been removed, since it require to much controllers for a real use.
I Want to Be The Guy:
I found a minor bug in the "demo" version I tried, where the reconfigurered remap did not save. I guess it might guess I opened it directly from the zip file. Otherwise it could elsewice fit perfectly in a arcadecab, so just keep it anyway.
Grid Wars 2:
This game is very controller friendly and you can really play it with just a trackball or a one 8way joystick as well with 2 buttons (which is minimum required to play that game), but it most fun with the named controller scheme's. I just add that patch since some people requested it and it was wrote in that language I normally use. And no, I have NOT created that game, but just added a few addiation controllers and get it more cab freindly, since the source code was included.
Also:
Many games is almost arcade friendly, if it was not a problem with the hiscore, where you require a full keyboard to insert the name... grrr.
And yes I think I add a wiki pages about this one. You can really do the same, since you just can use your username and password.
Elsewice even there is other threads about it, it a good one to start since it is long ago and is property hard to find these... so welcome on board, since I see you are relative new user :D.

I intended for digital joysticks that can work the turret angle as well as have secondary function (such as zoom) when on foot. When I play on my computer I almost only use the mouse with 2 buttons (trackball on cab) and the arrow keys (left digital joystick on cab). Very few of the other buttons get used a lot. Depending on one's control panel, and how they layed the buttons out, it could either be horribly cab unfriendly to working well on a cab. (For it to work on my cp, I would need to add a trackball for direction that the charactor is looking, as it would be horrid with 2 joysticks).
BTW never played the console versions, so I cannot comment on those controls...

They used all buttons on the Xbox 360/PS2 controller (these versions I have played), and is clearly for me designed for that.... But still it have no fell of arcade game at all. The list should split into two list, these with real arcade/simple arcade game, and these which might require more controllers, lige GTA games.
Howover GTA1 and GTA2 can been a real gem on a arcade cab, which might play a much better than these 3d versions!
Space Fractal:
since this became a stricky thread, why not add some links to other threads about pc games in cab, like this:

I also think commerciel, shareware, freeware should been wrote as well. GTA1 is released as a freeware game example and is a great cab game, much better than vice city for a cab (require only a joystick and few buttons).
