I setup 2 Alpine 5 1/4"'s and 2 4"'s in my cab in progress, I just wired them to a small surround amp, didn't bother with the car amp. Sounds great. Don't buy crappy little 5-10 watt speakers that are in most TV's, there is zero low end and they sound awful.

The main thing that I looked for (very important to me), was speakers that had a separate control for volume that was NOT on the speakers themselves.  That way I could mount them in the arcade and then run the wire for the volume to the outside of the cabinet for easy access.

i was thinking of using something like this and mounting on the top edge or something... maybe under the edge of the control panel.. dosent control the speakers them selves but controls the volume on the computer

Just use the OS volume controls! Much easier. Program your iPac or the like to have it alter the volume with a shift key. For example shift joystick-up and shift joystick down.
