I'm almost done with my cab (yay!).  I'm just tying up some loose ends now, but have a few questions.  I'll just jump right in.

I've got a Happs 2 player coin door.  It's hooked up, but it won't register coin drops.  I can manually flick the microswitch and it works fine, but quarters do nothing.  I don't think dropping them through is pushing the microswitch hard or fast enough.  Any ideas?

I'm looking for material to make a bezel out of.  Something flexible but sturdy.  I thought about spraypainting some styrofoam, but it might be more trouble than its worth (getting the proportions correct that is).  Something cardboard-y might work better.

I totally forgot about this, but the TV I used for the cabinet has a large magnetic splotch in the upper left hand corner of the screen.  I seem to remember degaussing as a solution, but have no idea how to go about doing this.  Thanks!

Most likely the quarter is not pressing the switch all the way. Can you post a picture?

Happ makes a really nice plastic bezel - comes in different sizes. That might be an option. Divemaster sells it cheaper than Happ.

You can use a soldering iron (the gun style). Search google for degaussing methods and you should find info on how to do it. Basically you hold the gun with the side facing the screen, turn it on and move in a circular motion, move slowly away from the screen and make the circles bigger as you move back. Stop when you're like 10 feet away.
Turnarcades:
You can make a decent bezel out of any wood/mountboard/card. Just be sure to measure the distance from the inner cab edges to the screen perimeter carefully.
Blanka:
Use PVC or ABS plastic for a bezel (model making shops have this). It can be cut with a knife, bent and glued with ease and finishes very nice.

Sure.  Sorry for the lo-res.  These were taken with my Macbook's webcam.

The first is the switch in its normal state.  The second is the switch with me holding a quarter inside to show how far back it gets pushed.  Sorry for the orientation if it's a little wacky.
