I currently have a Panasonic XR55 (no HDMI inputs) and I'm thinking about upgrading to the Onkyo SR606.  I'd like to use the HDMI outs on all of my devices that I'm using component for (satellite, XBOX 360 and PS3).  My question is will I be able to get 5.1 through the HDMI for each of these?

When HDMI first came out some devices did not make full use of the format, ie passing only video but not 5.1.  Now, especially with the latest devices, you should most certainly not have that issue.  360 and PS3 should work just fine for both 5.1 and video to the Onkyo. As far as your Satelite receiver you would need to check the manual but my guess is if it's fairly recent you will be able to achieve what you are looking to do.

Ah, okay.  I wasn't sure if I would need to use an optical cable in addition to the HDMI cable for each device.  I've also read of some devices not being able to output both analog and digital audio signals simultaneously.

CAN output!
Mostly PC hdmi is mostly soundless.
Now at last some vidcards are appearing with built in audio-section. And don't forget to install the audiodrivers too. They never re-use onboard audio.
