Some searching on the forum will provide you all the answers you are looking for in your project. Take the time to use the search feature and you will find many threads of people doing similar builds.
You can use any type of connection you want with your wires. You can use quick disconnects (the most popular, they are the male and female contacts the join together), crimp on connectors, and if you really wanted to you can solder the connections.

Forget the J-Pac your cabinet isn't wired for sticks and buttons and given the number of wires you'd have to run to the J-Pac it's not worth using a J-Pac and the existing wiring. Mostly because the Golden-Tee machine does not have a complete JAMMA loom.
Fit the PC with the Arcade VGA card to give you video that will drive the arcade monitor and either get an I-Pac and wire your controls to that, or get a Keywiz http://www.groovygamegear.com and wire them to that.

Book has been ordered and after a few posts in other areas I have my plans!! Just one quick last noob question! In my golden tee machine I have 2 speakers in the front (which off the top of my head are connected to my Jamma loom). Can I use the speakers for my project or will I need some PC speakers to take the sound? It would be nice to have the Cabinet speakers for authenticity though! Im guessing the only way I could do it would be by hacking a PC amp somehow?
