Which Soundblaster Card?

Soundblaster 16 were built for compatibility. I'm sure you'll find everything you need. They're also probably the most widely supported so if you don't get what you need I promise you can find what you need.

Yes, I suggest sb16 as is it the most compatible sb card.  sb16 was very popular, there should be dos drivers out there for it.  sb32awe and sb128 has dos drivers, but I heard they were a pain to configure.

The PCI SB 16 is not quite as "Soundblaster Compatible" as the actual original ISA cards were. For that matter neither are the current ISA SB 16 cards (i have one of those, and the joyport crapped out on it after a couple weeks).

BUT. You can get any of the SB cards working in DOS if you try hard enough.
