I think I'm doing my math wrong. I figure 10KΩ 300° restricted to 270° amounts to a 9KΩ pot. If one wants 5KΩ out of that, I figure ~11.1K would be the resistor to use. Am I missing something?

SavannahLion, your math is correct.  ( 1 / R ) = ( 1 / R1 ) + ( 1 / R2 )...
