The description of those joysticks at QuarterArcade is misleading:

The only Nintendo games that those joysticks will "work fine" with are VS. and PC-10 machines. They are 8-way short-shaft (for metal CP's) joysticks. "Nintendo's other games such as Donkey Kong, Donkey Kong Jr., Popeye and Mario Bros." use long-shaft (for wood CP's) 4-way joysticks (2-way in the case of Mario Bros.).

If you replaced the 8-way restrictor with a 4-way, you'd have a Punch-Out joystick (the only 4-way upright from Nintendo that used a metal CP).

as nintendo cocktail uses metal CP, are the joystick used in nintendo cocktails the sames than the ones used in VS or PC-10 ??

I don't know. I've never seen a Nintendo joystick from a cocktail machine. If a VS. machine joystick fits the mounting holes then I don't see why it wouldn't work. Do you already have the cocktail machine? If so, does it have an original joystick that you could take pictures of?

Also, you might want to ask over at the KLOV forums. I have a feeling that "Phetishboy" would know for sure. He said this about the various types of Nintendo joysticks:
