Newbie I-Pac Question

If I wanted to connect 3 joysticks (2 -8way and 1 -4way)
Could I hook up the 4way and the 8way to player one at the same time so I could be able to play the old classics)

Yeah, that is no problem. Doubling up the inputs like that will work fine.
However, you have to be aware that both the P1 8 way and the 4 way will be 'live' all the time unless you add some sort of switch or something to disable one while you're using the other.

Yup, I second LakeShark said. Just double up the inputs (i.e, joy1 left and joy2 left wires go into the same terminal on the IPAC) and it will work.
However, when EITHER joystick is moved, the input will register. To fix this, one way would be to add a toggle switch. Let the toggle switch connect/disconnect the single GROUND wire to each joystick in a mutually exclusive way. As far as wiring goes, this is the easiest way to do it (only one wire to switch).

I wouldn't bother with a switch. Just don't waggle the 8-way switch whilst you are using the 4-way one and vice-versa.
Keep them enough distance apart so that you don't knock the unused stick with your arm, and you'll be ok.
