You might have bought/used the wrong gauge wire for your QD's.. but usually the "fold over the wire itself" and then crimp...
Are you using stranded or solid core wire?
*shrug* Not that there's anything wrong with soldering the QD's to the wire... just shouldn't be necessary...

How well the QD holds onto the wire also depends a lot on the crimper that you're using. Some crimping tools give you a lot more leverage than others. Also, some are shaped differently and don't clamp down as well as others.
