From there you can clip off more from either end or both ends to make the sentence mean whatever you want. Such as...

No adding stuff or mixing up words obviously. You are getting into a mangle if you go that route.
So, ya, just clip from the ends, not the middle, and don't add anything. Even punctuation
Rarely, but sometimes it is acceptable to clip from the middle if you add an ellipsis. This is highly discouraged, and is usually reserved for the beginners or the elderly.

I would never add anything not originally written or completely hack something up. I'm pretty sure I'm guilty of clipping out middle sections, but that can happen in the midst of Cooperative Quote Fu.
