Control Layout Question

I have recently decided to add some Nintendo 64 games to my cab but I am stuck on finding a way to have the buttons laid out.  Most of the games will only be used by both players.  I have a six button layout plus a coin button and a start button for each player.  I have two 8-way joysticks which I know are not ideal but they do work for these games for the most part.  The games I would like are:
Cruis'n USA
Diddy Kong Racing
Goldeneye
Mario Kart 64
Perfect Dark
Star Fox 64
Star Wars Episode I - Racer
Super Mario 64
Super Smash Bros.
Wave Race 64
Wayne Gretzky's 3D Hockey
Any suggestions for a layout that would work for all or at least most of them?

If you don't mind using actual gamepads with your cab, then you should check out the N64/PSX USB adapterhttp://www.ztnetstore.com/product_info.php/products_id/86 .  It works fine for me  :)
