UAII Cab advice/ ideas please

I am currently resurecting my UAII cabinet it is half built at the moment base only. I had to take it all apart when I move and now iv finally got round to building up again 9 months later. I also have a mame cabinet partly built aswell its an arcade conversion.

My question is this with me already having a mame cab with trackball and 2 player setup to play all the mame games/ nes/snes emulators what ideas could you guy suggest for the second cab?

Iv toyed with a few ideas but am undecided. Ideas are as follows

1. Turn the UAII into a dedicated cab for 1 of a few choices 1. Mortal Kombat 2/3
                                                                                              2. Smash TV
the reason I chose these two apart from enjoying the games is the fact they use a very specific button/ joystick set up/ layout
                                                                                             
2. Put my Dreamcast in there and play all the d pad compatible and gun games

3. Make it another dedicated game  undecided as yet.

I am open to suggestions as am really unsure what I want to do with it at this stage and keep changing my mind.

What ever I decide it will include a coin door if Dreamcast for show only, and a 28" tv

If I had room for two cabinets, I would seriously consider making one a vertical only cabinet (ie mount the monitor vertically).  The UAII probably wouldn't be the best cabinet for a vertical though -- what is the other cabinet you converted?

If I ever get around to multiple cabinets I want:

1.  Horizontal MAME cab (with Project Arcade CP layout)
2.  Vertical MAME cab - probably 3 buttons per player
3.  Fighter cab (with dreamcast installed too)
4.  Cocktail cab

The other cab is a converted Golden Tee 2005. I think at the moment its between A Dreamcast cab and a specific game set up like smash tv controls
