You would need two joysticks for Battlezone (with a top firing button), I would think ... and a spinner with minimum two buttons for other games as well.  Add to that coin, player 1 and 2 start and couple other admin buttons.

Omega race has 4 start buttons, actually.  You can have 1 or 2 players, but you also have start with two credits for each player for additional ships per game.  Doing the original volcano buttons for start game would be ideal.  Add LedWiz to the setup, so these buttons lit up when you have enough credits and it will be as original as it was in Omega Race. 8)
