Tahnok, by any chance do you have pics of the CP with the real joystick and twist joystick?  Since the twist joy uses a 1/4" shaft, I wonder if the mini-steering wheel that www.ezarcadesolutions.com sells would work for it.  Your concept definitely has me thinking!

Tahnok:

Here ya go... Not one of my best CPs, just a little personal thing made out of a wireless Ms. Pac-Man unit. Ignore the white joy, it's just a fusion painted Super. The single white button is menu. The pink block is the Jakks joystick, hot glued in (no real good ways to mount it).

I seem to recall having a discussion bishmasterb, who was going to use a mini wheel on his. I'm not sure what ever happened with it though. I don't think there's any reason you shouldn't be able to do it.

Edit: Looking at the wheel, my only thought is whether or not the thing is strong enough. I've never had problems with the little knob, but the leverage of a wheel might be a different story.

Edit: I don't know how I double posted.

Tahnok, nice little CP.  Thanks for the pics!

Since there are some guys who have opened up their Jakks already:

I bought a Ms.Pac Man with extra game key included for 4,95 at EB games, couldn't leave it for that amount. I thought my PAL TV would handle it even though the game is obviously NTSC. It does work, but the colors are wrong. Did any of  you guys notice any jumper or something else on the PCB that could indicate PAL/NTSC switching ?

I made the mistake of thinking it would work fine because I already have a US DC here that works fine, but that is only because I connect it using a SCART (=RGB) connector.
The JAKKS have only a Compsite Video out.
