Is there a reason to get a 2 slot coin door over a 1 slot coin door?

You could always wire the single coin slot switch to fire all the player coin inserts.

Some games will report a coin mech jam
Others will automatically start the 2nd player

Just a note for those who are having trouble:
I was using a powered USB hub with my 2 guns in XP. The guns worked great - I just couldn't boot up with the darn things plugged in thru the hub. So i ditched the hub and I'm plugging the guns directly into my USB ports with extension cables.

Now they don't get enough power anymore. I can't seem to activate the hardware calibration mode anymore. Seems like I have to buy another usb powered hub. ;)

I know a lot of the original PCBs I've seen have jumpers that change how the coin input is done.  For example, on SFII CE you can set it to Each Player has their own coin or share coin.

I've seen similar jumper settings on other boards as well.

So, just because the version of a game in your arcade required seperate coin slots, does not mean that is how the game has to be ;).
