also how do i get back to the set up screen to add emulators and rom folders

Right click to bring up options. Then hit the 'other emu config' tab to start setting up nes and gen

Many presets have already been set up for various emu's  (see picture attached) to make it easier

I think this is where you should do some experimenting/ searching for answers and if you really get stuck start a new thread with your question.
