I bought a "converter" for running the laptop from the cig lighter in the car for $20.00, I think that would be the easiest way to do a mobile setup.  Just fold the screen over the back (some modification required).  Sling it over the back of the seat with a pair of usb controllers and the kids would be satisfied for the long trips.  Or mount it up front so you have better view when the wife is driving  ;).

I am also a fan of the mini's.

Just been having a mess about with some spare stuff I have...14" Amstrad RGB monitor, Dreamcast & hacked VGA box.  Found the manual for the Amstrad, cut the end off a VGA cable and wired it up...this would make a cool mini cabinet:
