I haven't bought anything yet, planning everything first and the width of the UAII prebuilt sounds a bit iffy.

Wow, nice. Does it suffer from the power on/channel memory issue a lot of TVs have?

I just finished my cab and it is a UAII kit.  I used the JVC 27" TV that people talk about in the forums.  I believe it is JVC-27A33.  They are discontinued but,  I found that Conns Appliances and Electronics still have the around.   The power stays on when turned off and speakers are on the bottom.    Not to mention it slides in perfectly with the UAII cab.

Yeah, my model of TV remembers the input it was last on after the power goes out. (S video)

Only use the UA2 plans for the side dimensions...you have to buy the tv first and base the width length accordingly based on the width of the tv, I think I did the width of the tv then 2 inches each way.
