I would like to do something like this for Stunt Cycle. Either that, or I would just like to find an original dedicated Stunt Cycle cab.

If you're referring to Pong, yes. If Stunt Cycle, I don't think so. There was a guy working on emulating the discrete logic of Stunt Cycle, and he even had it partially working. But his site is gone now, and he had not shared his code with anyone that I know of. I have the ROM images and the schematics of the machine. Hopefully someday I'll have time to sit down and try to figure out how to do it myself. :(
