I don't own any arcade sticks myself, but I wonder if anyone has tried to add a "hat" to the top.
I suppose it would be easiest to do on the sticks w/ the removable top, then fashion another ball top out of wood and thread a hole to mount it on the joystick again.  There is a suitably sized hat on my dreamcast gun.  
My next question is, do the joysticks have a hollow shaft?  
If so, is there space to drop the wires through so the went get bent or kinked?

The Happ Top Firebutton Super Joystick has a hollow shaft.  The top doesn't unscrew, but you can heat it up and pull it off.  People have attached flight sticks to these in the past.
