Is there an easy way to make custon mame configs?

Im trying to setup a retropie cocktail setup, i allready got a nice image with 800 games in it, but the games are all for upright cabinets, so i was wondering if theres something out there that would help me create custom configs to tell mame that the games are un cocktail mode. I know i can do one by one, and also, retropie uses mame 2003, so the config files are no editable with a text editor, making it hard to use a tool to batch modify the configs, thanks for any help.
