When I have a gift card burning a hole in my pocket and don't know what to buy, I get boring everyday necessities like soap, cleaning products, laundry detergent, etc.
The cash in my budget freed up by using a gift card for those items can then be spent elsewhere.

If you have prime, just watch www.slickdeals.net for random good deals.
Example of random: Looking over my recent orders I have a 453 lumen camping lantern for $5, a gallon of Gojo for $13, a 50ft Cat6 cable for $5

Last year I got a set of Aukey bluetooth headphones for $15.
I didn't know I needed bluetooth headphones until I had them.  They don't sound as good as the expensive wired ones I have, but I find myself preferring them anyway.
I think this is the newer version ($21 after coupon on the page) https://www.amazon.com/AUKEY-Latitude-Headphones-Sweat-Resistant-Bluetooth/dp/B06ZZSQQTD/ref=sr_1_1_sspa?ie=UTF8&qid=1532029174&sr=8-1-spons&keywords=AUKEY+Bluetooth+Headphones&psc=1
