Need advice and help with a Star Wars yoke build

Hi everyone,
I need some advice, and probably help with a build I have wanted to do for years now.  I have an original "lock on" cabinet with the Star Wars type flight yoke.  I want to do a multi board with Star Wars, ESB, ROTJ, paperboy,roadblasters, and any other game that can use this setup.  I want as simple a system as I can get.  I have an old dual strike controller, not sure if that is relevant or if there is a good way to input the yoke to the computer or raspberry pi or whatever will work best.  I don't mind installing an led monitor.  I have worked with hyper spin and game ex and then bought the first raspberry pi but it worked lousy.  I have not done anything else for a system in years.  What is the easiest system that will run at full speed and have a simple front end that will require no extra buttons?  Does anyone offer a service to set it up?  any and all help appreciated

If I understand you right, you want to hook up your yoke to a computer? 

If that is the case, then use an A-Pac for the simplest way to interface with the PC.
