I'm just going to edit this a bit from my original post:

I was pretty interested in the possibilities that can come from using hdmi to vga converters now that they're being sold by the truckload and they offer so many useful applications for anyone who still owns a vga monitor.

Has anyone considered giving this route some serious thought for using them in your game cab?
