Everything were as described except for the buttons. The good part is that I mostly needed the encoder and the joystick so, not much harm done!  :)

I picked up two RPi3 boards with 32GB SD cards and cases for $80 CDN (used off a local online resell site).
I plan on using one for a NintendoPI project, the other will be used in my Punch-Out bartop.

However I'm unsure if I should use my Zero Delay Encoder, KADE, or Ipac, all of which I have lying around.

I'm heavily leaning towards the ZDE as I think I could sell the KADE and Ipac to be honest.
And realistically I don't think Id use the ZDE elsewhere.

I thought I read prior that the ZDE had some lag ? Has anyone found this to be correct ?
Is the initial set up rather easy ? I'm very much a novice at this stuff.

Any info, advice, tips and tricks would be welcome.
